The ice-cream and omelet looks extremely yummy!

Thanks for sharing the recipe! Have to get my 4yo niece eating veggies!

    Nora

OK, that's dinner tonight. The omelet, not the ice cream.

    Kim

Stowe is one of my all time places to visit. :) Thanks for the recipe!

    Elizabeth

I hear there is a birthday coming up. Since I'm leaving town for a week or so, sending greetings today.
I haven't heard the name Smugglers Notch in about 35 years, but it brings back wonderful memories of my first ski trip at Stowe when I was a wee one.

    margene

That might be the most perfect day ever!!

    Carole

That omelet sounds great. And you don't have to cook the veggies first? Even better!

    Stephanie

I was just staring at the buttload of greens from our CSA and garden and thinking about what to make for dinner. I was thinking frittata, but this is so much easier! Oven omelets for dinner tonight!

    Mary K. in Rockport

Stowe -- one of my favorite places in the world. But it is kinda far from the ocean.

    gayle

Oven omelets look divine. I usually make frittatas, but the individual serving idea would let me have mushrooms. (Husband won't touch mushrooms. Ever.)

    Patty

    Yum...thank-you, thank-you, thank-you. Oven omlettes all around!

    (formerly) no-blog-rachel

You certainly know how to live, Norma!

What a cute post!! Ginger peach would have been my choice too. Sounds delicious. Oh, and I'm sooooooo making that oven omlete!!!!

    claudia

Mmmm. Baked omelete. Easy enough for even ME to make.

    alice

Thanks for the recipe. I just had annoying dental work and need more soft-food recipes incorporating seasonal vegetables (how can I avoid local vegetables this time of year?).

And ginger peach....ginger peach tea is one of my favorites, so I would imagine that the ice cream is sublime.

    Robby

She knits, she cooks, she can identify divine food in the wild. The NEW renaissance woman! Off to forage in the veggie drawer.

    kmkat

We are currently drowning in home-grown eggs (I'm sure there is a better descriptor but it escapes me right now since I haven't had my coffee yet). That oven omelet thingie might be just the ticket for dinner tonight. Thanks!

    Cheryl S.

Oh, yummy! I like the individual serving thing for the omelette.

    jodi

Oh, Norma, even though I don't eat eggs or cheese that omelette looks gorgeous. I'm totally making those for everyone else next time we have overnight guests.

    Sandra

yum. so much easier than trying to feed a large group using a fry pan...

    Seanna Lea

Sunday is National Ice Cream Day, so you might want to get another scoop of that deliciousness then!

    tayloe

Thanks for the recipe-looking forward to making it !

    Beebs

Certainly a day made in Heaven.
    Thanks for the great recipe!

    Doris

Sounds like a wonderful day! And the omelet looks delicious. I will have to try that recipe soon.

    Kym

My absolute favorite kind of day! :-)
    And those veggies! Mmmmmmmmm!aa

    Cookie

    Yummy!

Since ice cream day is coming, I think I'll bake some peaches with some ginger and have that over ice cream. It won't be the same, but you mailing me that ice cream wouldn't work well.

    xo

    Renee

Oh, that is the GOOD life! :)

    Carol Cousins-Tyler

I am so green with envy! The omelet looks scrumptious and the ice cream is to die for! About 10 years ago, while visiting Vt., we came home through Smuggler's Notch. Great trip and beautiful country! Lucky you! Carol

    MommyKnits Jen

I make a similar dish and my favorite is leftover salmon and asparagus. Yum! If you assemble it the night before and leave it in the fridge overnight it tastes even better and you don't need a lot of salmon to get the flavor all throughout.

Now I need to make salmon for dinner and ice crem for dessert tonight!

    Andrea

Man alive, that's hard to look at when I'm at work and nowhere near my oven, freezer, or farmer's market (since I don't garden, or at least I didn't this year). Yum!

    Jean E.

The omelet sounds very good; I must try it. I am making vanilla ice cream right now! The current Fine Cooking magazine has a great recipe, as does the Pioneer woman ( her blackberry is amazing!)

    Birdsong

Breakfast? You just solved dinner for me! Now, I'm off to spin for a few hours with my grrls and a clear conscience.

    Jan

Mmmmm. Norma, you are a delicious oven omelet!!! Thanks!
